Apothic Brew 750ML

The limited release Apothic Brew is an innovative and bold red blend infused with cold brew coffee. This plush, full-bodied blend matches the concentrated dark fruit notes of red blends with the mocha and subtle chocolate characteristics of the cold brew. Hints of maple and toasted oak linger on the long finish, highlighted by the distinctive rich, smooth depth of cold brew coffee. Viticulture Notes: Grapes for Apothic Brew were grown in California’s consistently warm and sunny growing season. Ideal conditions for steady, full development, grapes were picked at optimum ripeness. Harvest was early, with low yields and small clusters, leading to outstanding, high quality grapes. The wine shows rich, intense concentration with bold structure and balance. Winemaking Notes: The grapes in Apothic Brew were harvested mostly at night in cool, crisp temperatures to preserve the rich, natural fruit character. Fermentation occurred at a maximum temperature of 88°F in a combination of cone sweeps and upright stainless steel tanks before undergoing malolactic fermentation. During aging, the wine was racked every two to three months. Cold brew coffee was infused into the blend before bottling. An additional two months of aging allowed the smooth, rich cold brew coffee to blend seamlessly with the bold fruit notes of the wine, while still retaining their unique characteristics.

Renato Ratti founded his winery in 1965 and was the first to map the region of Barolo, paving the way for the commercial idea of terroir in Italy. After Renato’s death in 1988, his son Pietro has carried on his father’s legacy, Ratti's Nebbiolo was first released in 1969. A cold and rainy spring replenished the water resources in the soil. A warm and sunny summer with significant daily diurnal range gave ideal conditions for fruit development. Harvest occurred in late September.
